One Pot Greek Eggplant and Rice - An easy to make baked casserole topped with mizithra cheese! | omgfood.com

You guys!

Sunday was a big deal for me. And I didn’t even realize it was a big deal until a couple of days ago! I’ve been so busy lately,  I haven’t paid much attention to the dates.

Sunday marked the four year anniversary of me quitting smoking. I last bought a pack of cigarettes on October 11th, 2011, smoked maybe a couple cigarettes from that pack, and got rid of the rest. And I haven’t looked back since. Yay for smoke-free living!

I think I missed it because I was too busy playing catch-up on blog stuff along with everything else. With working overtime the last couple of weeks, it’s been a little tough keeping up with life!…

Instagram post 2170597907933494570_1604508595 Last night, I hit publish on the first blog post in a year. Between my mom's health declining and our aggressive house-search, finding the motivation to blog became difficult and it only got worse once April hit.⁣
⁣
I finally feel like I'm ready. There are still plenty of stories and recipes I want to share! But first, let's start with this: just a little story about my mom who's a big reason why I love sharing everything about food to begin with.⁣

Instagram post 2099102256377746808_1604508595 OMG HIIIIIII - it's been a hot minute since I've posted to my feed here (and many months since I've posted on the blog, oops). I've needed the past few months to recharge a bit and tend to some self care.⁣
⁣
In all honestly, it had been difficult trying to give myself creatively and I just accepted that I wasn't ready yet. A project recently popped up at work where I had no choice but to try and I got to work on some amazing photos with an amazing team. This project couldn't have happened at a better time; it was a great way to get myself behind the camera again.⁣
⁣
The saffron shown here is one of my favorites because it's both simple and bold. I just love it. I'll share more soon, but I just wanted to say hi and I promise I'm not hiding forever. I've been feeling the itch to get back to blogging and have lots of tasty recipes I'm dying to share with you soon. <3
Instagram post 2025594724949400825_1604508595 On Tuesday, after a long battle with cancer, my mom rested her eyes for the last time. She was at home and went peacefully in her sleep.⁣
⁣
I can’t even begin to describe what it is I’m feeling, or just how much she meant to me. When at the hospital last week, down to a mere weight of 62 pounds, her oncologist looked at her in awe and said, “you are such a strong and powerful woman and I need to ask, what is it that has you so determined to be alive?”⁣
⁣
“I never turn down a dare,” she said.⁣
⁣
Mom was bold. And fierce. In the best way possible. She remained that way to the very end. I only hope that one day, I can be half as courageous as she had been.⁣
⁣
She was also compassionate and selfless; she always put others’ needs before her own. It was so important to her that everyone else was happy and taken care of. She especially loved to feed people and if you ever visited, you never left hungry. It also didn’t matter if it was 1am on a Tuesday, if you were awake, so was she, and she made sure you were well fed then too (even if you didn’t feel all that hungry at the time).⁣
⁣
Mom, I’m really not sure how I’ll navigate this earth without you. I am beyond thankful that you’ve taught me so much, loved me unconditionally, and helped me become the woman I am today. I’m going to miss our frequent phone conversations about new recipes to try.⁣
⁣
I love you so, so much.⁣
⁣
We all do.
