Hello, friends!

I hope you’re having a fantabulous week! I also hope you’ll forgive me for being on this crazy-inconsistent blogging cycle. Every time I try to get back in, something comes up and I have to decide which project will go to the backburner. Unfortunately, it’s had to be the blog in most cases (which is probably obvious at this point, yeah?), but you guys. Really.  I 👏🏼 am 👏🏼 working 👏🏼 on 👏🏼 it 👏🏼

For realsies.

I’m still figuring out how often I’ll be able to put out new content; I have tons of photos in the backlog already and I am excited to share them all with you! Once I have that sorted, you’ll be the first to know. Life has more or less come back to “normal” as my client work has dissipated, I’m ramped up on the new job, and I’m back from vacation! Not too shabby.

And yes, new job! Same company, same team (for the most part), but a new role! I transitioned in late February and the new gig involves lots of tasty food photography. That’s the most of what I want to share about it at this time, but I get to work with amazing people every day and I’ll be able to squeeze in some travel here and there too. I absolutely love it.

As for vacation, more on that soon! I recently went to Trinidad and Tobago with Jay and some friends. It was an amazing time and I have photos and stories to share. I was actually going to post about it this week, but I still haven’t had a chance to sort through all the photos. Instead, I’ve decided to update this psari plaki post to spruce it up a bit, which is something I’ve been meaning to do for a while anyway! Just don’t ask me how long ago I took the photos for this update, mmmkay?

Sunday was a big deal for me. And I didn’t even realize it was a big deal until a couple of days ago! I’ve been so busy lately,  I haven’t paid much attention to the dates.

Sunday marked the four year anniversary of me quitting smoking. I last bought a pack of cigarettes on October 11th, 2011, smoked maybe a couple cigarettes from that pack, and got rid of the rest. And I haven’t looked back since. Yay for smoke-free living!

I think I missed it because I was too busy playing catch-up on blog stuff along with everything else. With working overtime the last couple of weeks, it’s been a little tough keeping up with life!…

Jason doesn’t like lamb.

There are a few things he doesn’t eat, like most seafood (he’ll sometimes eat light fish, but that’s about it), pork, most meat on bones (seriously, wtf), and lamb. He will at least attempt to break away from his picky habits depending on the food – he ate calamari the other night and didn’t completely hate it and he ate chicken wings. Meat on bones. Jason. OMG. Okay, I’m done, but anyway – don’t ever expect him to touch pork. That will never ever happen. Unless you maybe offered him a lot of money to.

He will sometimes eat lamb “if he has to,” but I think he’d have to be desperate. When I first met the dude way back before dating him was even a thought, he was a vegetarian, so he’s come a long way since then. Every time I make lamb now, I try to shove it in his face, but he won’t do it. And I just want to yell, “DON’T YOU KNOW WHAT YOU’RE MISSING?”…

Blueberry Oatmeal Smoothie

I’m going to be honest with you. I don’t actually love the photos I took for this post. I kinda want to retake them. I’m learning more about photography as I go and I don’t exactly see what’s wrong with the photos until the photo session is way over. But I’m starting to notice composition issues and how I could have fixed them, how to balance the light better, etc. and I know now what I could have done to make these photos look even better! Though there are lots of photos from older posts that look way worse that are on my radar to fix first. I’m a bit nit-picky when it comes to my own work.

Okay, that’s all! Thanks for letting me share that with you. I feel much better now.

Jason and I are really bad about having breakfast during the week. It almost never happens. It’s something we’re trying to work on and one step we’ve taken to get towards that is having smoothies!

We don’t have a good reason as to why we don’t do the breakfast thing. It’s straight up laziness. We pretty much stay in bed until we have to get up most days. And making smoothies only takes a quick couple of minutes and we can just have it on the way to work!

I’ve been making green smoothies, strawberry banana smoothies, my favorite: chocolate peanut butter banana smoothie, and as of recently, my latest obsession: blueberry oatmeal smoothies!…

Grilled Chicken Kalamaki

I know, I knowwww. Greek food galore! But check it: the last two posts, maroulosalata and tzatziki? They go real nice with today’s post, which is grilled chicken kalamaki!

Kalamaki is meat cut into cubes and marinated in an olive oil and lemon dressing, usually overnight. Then, you grill that meat and devour! A good choice for grilling season if I say so myself.

Oh, hey! I’m writing to you from a plane! I’m headed to Los Angeles for work. I’m pretty excited about it.

A lot of you know this already, but when I’m not working on this food thing, my full-time-40 hour-per-week-money-making-job is in video games and I’m headed to E3 to show off Rock Band 4 to the world with a bunch of co-workers! You should pre-order it because it’s going to be awesome. Just saying.

Also, I love technology. Writing a blog post from a plane while flying somewhere over Kansas is pretty awesome. Especially because I’m going to publish immediately! Just like that; a recipe to be shared with the whole world via Virgin America Flight 363. I’m into it.

My original plan was to write this ahead of time and schedule it for Friday, but I figured Fridays are already exciting on their own for the most part, right? It’s the day before the weekend, so you’re already stoked for that! And that’s why I’m sharing this recipe with you today. Monday needs to live a little.

So anyway, today, I’m sharing tzatziki! One of my favorite Greek dips. It’s great for dipping whether you have pita bread or pita chips and of course, a huge reason why gyros and souvlakia are delicious. …

Swiss Chard and Mushroom Quinoa

Okay, people. It’s Monday. If you had a wild weekend of food and drinks like I did, you are probably in need of some healthy eating tonight. I got your back.

I was going through some really old pictures I posted on facebook sometime last week, so that I could see what my food photos looked like back then (I used to drown my newsfeed in food photos before I started blogging) and I came across this swiss chard and mushroom quinoa dish and I said to myself, “Oh, yeah! I remember making this. That was good. I should make that again.”

Good story, right?

Nah, but for real, it had been a while since I made a good quinoa dish, so naturally, I got excited about it.

Also, the food photos I used to take were really awful. I mean, REALLY. At least now, I try to make the food look good in my photos, but these were simple iPhone shots in the worst lighting possible taken at the worst angle possible. I thought about sharing some with you in this post, so we both could laugh at me, you know? But I’d rather not scare you off. It’s for the best. Trust….
