Harissa Paste

A hot and aromatic chile paste with smoky elements, harissa is a staple in Middle Eastern and North African cuisines. It’s made with a blend of hot chiles, garlic, olive oil, and toasted spices.

I want to talk harissa with you. The vibrant, addictive, flavorful, and hot amazingness that will pack a punch to whatever you add it to. It’s an awesome addition to stews, meats, veggies, dips, dukkah-crusted pork chops — you name it. It’s a condiment that’s widely used across the Middle East and North Africa and the recipes tend to vary between different regions.

A standard recipe will include a blend of smoky chiles, fresh garlic, toasted spices, and olive oil. You can also include other ingredients like sun-dried tomatoes or fresh lemon juice (more on that below). There are lots of options when it comes to harissa paste and you can customize the recipe as you see fit to make it your own.

How to Preserve Lemons

Preserved lemons are a key ingredient in Eastern Mediterranean cooking. They add depth and a boost of umami you just can’t get from using fresh lemons. All you need to make them are lemons, salt, and a little bit of patience.

There are different ways you can preserve lemons; some recipes include a blend of salt and sugar rather than just salt, some with black peppercorns, and others with spices like cinnamon, cloves, etc. The type of lemons used can vary too; I alternate between regular and Meyer lemons myself (I used Meyers for this post). All variations are great; I decided to keep this post on the simplest side by just using salt….

Hi, friends!

Long time no blog! You know when there’s a project you want to start, and you keep putting it off, telling yourself you’ll get to it soon, and suddenly realize some months have passed? Yeah, hi, hello!

The last few months got crazy hectic with other excitement and I could have sworn it had only been a few weeks since I last shared a blog post.  Oops.

But all of the crazy has been good, even if it got me away from here for a bit. I recently picked up some client work! I’ve been doing some food photography outside of the blog and it’s been a lot of fun. It’s also nice to get some extra money to help pay off some of that funemployment debt. ;)…

Pomegranate Molasses

Pomegranate molasses is a traditional ingredient used in Middle Eastern cooking. It’s made by reducing pomegranate juice, with or without sugar, into a thickened syrup. It has both a sweet and tart flavor and can be used in various ways. Use it as a marinade, in dressings, beverages, or even as a dessert topping.

It is currently 19 degrees outside as I write this. I’m on the couch with a giant hoodie, thick fuzzy socks, and a hot cup of tea to keep me warm and I’m thinking about summer. Can we have summer back, please? I don’t want to winter anymore.

There are a few things I look forward to during this season: my favorite holiday (Christmas!), Jason’s birthday, some close friends’ birthdays, and my birthday all go down in winter and once they are all over, I count down the days to warmer weather. Okay, really, I start counting down in November, but after all of the celebrations, the countdown gets serious.

I will say I love me some comfort food and hot drinks during the colder months. I don’t really appreciate a good hot cup of cocoa or tea in the spring or summer, so I’ll give winter that. Winter allows me to fully appreciate hot food and drinks. :)…
