Hello, friends! Can you believe Thanksgiving is officially less than two weeks away? Time is such a trip, right!? I love pretty much antipasto anything and recently became obsessed with it in pasta form after trying it at a friend’s BBQ. Since then, I’ve made my own version and it’s become a go-to favorite for parties and also to have for lunch throughout the week.

I wish Boston had summer weather all year round. I am really getting into this whole “having a grill available on the back deck” thing and we’ve been using it most nights since we bought it. Also, beer, cocktails, and rosé all taste better while grilling. I have confirmed this.

Yes, I said beer! I very rarely drink beer because it doesn’t tend to love me, but I’ve been enjoying some corona and blueberry ale lately. There are a small few beers I can drink without feeling like I want to curl up and die afterwards and these are a couple of them, so I’ll stick with what doesn’t hurt me.

A couple weeks back, I posted a DIY recipe for za’atar and mentioned my obsession with it; aaaand I’ve made another batch since then. All za’atar, all the time! I’ve been especially into having it on chicken. I went from roasting it in the oven to grilling it. Because summer! I’ve been known to turn the oven on in 80+ degree weather in the past and always hate myself for it.

This summer, I’m going to try and not do that. Okay, actually, I did that once already in my failed karidopita attempt, but that was only once, you guys.

I’m hoping to post lots of tasty grilled recipes this season. I kicked off the grilling fun with the open-faced grilled caprese sandwich last week and today, it’s all about za’atar grilled chicken. Let’s get it on!…

HAPPY FIRST DAY OF SUMMER, EVERYBODY.

All caps were highly necessary for that greeting because, in my opinion, summer is the raddest season and while we’ve had mostly summery weather in Boston lately, it is now officially the best season of the year. Yassssss.

I feel the happiest and most motivated during the warmer months and aim to live somewhere where winter is non-existent…eventually. I love beach days, BBQs, outdoor dining, and not having to wear huge snow boots and coats. Also, summer cocktails.

Jason and I actually purchased a new gas grill last week because the one we had was very sad and just had to go. We debated on just using our charcoal grill for a while to save some cash, but we ended up finding a super awesome deal on a new grill and decided to go for it. I love having both options for grills handy, especially with the hot weather! We’re planning to use the stove and oven less frequently this summer.

So we’ve got summer officially here and a new grill to break in this season. What better way to welcome both than to make something fresh? Summer foods are where it’s at, no?…

OMG HI.

What a crazy last couple of weeks! Not so much on the blog, but outside of internet land (aka IRL), life was full of this household being ridiculously sick with a flu-like plague and having emergency surgeries. Okay, not multiple surgeries. Just one. And not me. Jason. He’s fine and is recovering like a mother f*cking champ.

That, in a nutshell, is why I haven’t posted anything since April 7th. That week, Jason was at home from work with what we assumed was a strain of the flu the shot didn’t cover and I was working on an upcoming post (this one). Within a few days, he passed the plague onto me and we were both down for the count for days and days. It was pretty much the worst, but also hilarious because we were both a miserable mess….

Okay, I might have gone a little overboard with the amount of photos in this post. Just giving you a fair warning now. I’m not apologizing for it.

So Cinco de Mayo is coming! By the time you read this post, the holiday will be tomorrow, but I wrote this in the past, so that means it’s in two days. It’s also my awesome friend’s birthday – Happy Birthday, Naomi!

I started this blog a little over a year ago, though for most of 2014, I didn’t work on it (if you want to know why, you can read my novel in my relaunch post). When I came back, it was the middle of December. I had debated on doing some sort of holiday-themed recipe, but I didn’t really have a schedule or plan for what I would be posting. I just knew I had to get the blog going again. So I’ve basically missed the mark on sharing recipes that would be fitting for holidays like Thanksgiving or Christmas! I could have done something for Easter, but for some reason I missed that train too. I wasn’t about to make the same mistake for Cinco de Mayo.

My original plan was to make delicious carnitas! But I did something really dumb and my pork shoulder went bad. I was so bummed; I hate wasting food. It wasn’t really in my budget to go buy another roast, so I moved on. They will happen at some point, though. Promise….

I can’t even begin to describe what it is I’m feeling, or just how much she meant to me. When at the hospital last week, down to a mere weight of 62 pounds, her oncologist looked at her in awe and said, “you are such a strong and powerful woman and I need to ask, what is it that has you so determined to be alive?”⁣
⁣
“I never turn down a dare,” she said.⁣
⁣
Mom was bold. And fierce. In the best way possible. She remained that way to the very end. I only hope that one day, I can be half as courageous as she had been.⁣
⁣
She was also compassionate and selfless; she always put others’ needs before her own. It was so important to her that everyone else was happy and taken care of. She especially loved to feed people and if you ever visited, you never left hungry. It also didn’t matter if it was 1am on a Tuesday, if you were awake, so was she, and she made sure you were well fed then too (even if you didn’t feel all that hungry at the time).⁣
⁣
Mom, I’m really not sure how I’ll navigate this earth without you. I am beyond thankful that you’ve taught me so much, loved me unconditionally, and helped me become the woman I am today. I’m going to miss our frequent phone conversations about new recipes to try.⁣

I love you so, so much.⁣
⁣
